Looking for one-pot beans, rice and veg ideas

Hi, as the title suggests, really. I'm trying to incorporate more vegetarian (or almost-vegetarian) meals into the weekly menu and really like the idea of beans (or lentils)/rice and veg one-pots, as they're filling, reasonably balanced and easy for leftovers and lunches to take to work.

Does anyone have any tried and tested recipe ideas, please?

I don't use recipes as such very often but you could do vegetarian versions of paella, risotto, jambalaya, fried rice.
Noodle dishes work really well cold and you can "cook" ramen and cellophane noodles by pouring boiling water over them so minimal effort. Or buy straight to work noodles.

Dhal , rice and peas , garlic fried rice with chickpeas added , what about fish i like doing tuna pasta with flageolet beans and french dressing mixed in eaten cold

Chickpea salad
Dahl
Lentil bolonaise
Moroccan chickpea stew
Shakshuka with chickpeas in place of the eggs
Puy lentil salad
Rosemary and garlic roast root vegetables and puy lentils

www.rivercottage.net/recipes/north-african-squash-and-chickpea-stew. Really tasty and quick to make. One of our davourite meals. The grains in it can be swapped, a mix of white and wild rice is particularly nice.

These are great ideas, thank you - keep them coming! For my part, I enjoy making Cuban black beans and rice.

We have an instant pot, it's a pressure cooker, slow cooker, rice cooker magic machine and its beyond amazing for one pot dishes. You just plonk everything in it, shut the lid and 6 minutes later out comes perfect risotto/dhal/potato and veg curry?rice and beans, etc.

They sell them on Amazon, and often go on sale (I got mine on black Friday last year)

Are we allowed a separate pot for the rice? That opens up more options.
Also how about cous cous? Again only need boiling water, then you have all sorts of Moroccan vegetable dishes

Oh, and stuffed vine leaves, peppers, tomatoes etc with rice fillings

All suggestions welcome, including for additional pots! I do have an Instant Pot, it's really good.

I'm making a basic chorizo and rice one pot for lunch- onion, garlic, peppers, chorizo- all fried off, paprika , salt and pepper added. Add wine if some is knocking about. Add rice and chicken stock- bring to boil, put on lid and lower heat to lowest setting. Leave for 20 minutes. Add in a tin of beans and handful of parsley - heat through and serve. Yum
