easy quick chicken soup?

Has any one got a recipe for "quick easy" (with and without veg)chicken soup?

It's not exactly quick, but it's easy:

1 small whole chicken or 4 chicken legs
selection of veg eg carrots, leeks, peppers, parsnip, all chopped
2 pints of stock
1 bouquet garni

Put the whole lot in a pan and simmer for at least an hour, either on the hob or in the oven, whichever you prefer. When it's cooked, pull the meat off the chicken and discard the rest, along with the bouquet garni.

You can eat it either as liquid soup with meat and veg visible, or put it through the blender. I always season it just before I serve it.
