Can you reheat carbonara sauce?

We are going away in the caravan and I'm making some meals up beforehand for ease of cooking. I was wondering if I make up carbonara sauce at home, can I refrigerate the leftover sauce and reheat it? Or will it split? I know that I theoretically could just make it in the van but I don't fancy the mess or the time being taken up.

carbonara sauce as in egg yolks and cream?

No. It is so quick and easy to make it isn't worth making ahead. If you reheat it you will end up with scrambled eggs and bacon sauce.

To make carbonara you just fry some bacon and garlic, add the cooked spaghetti and then stir in the beaten eggs and grated parmesan off the heat. Real carbonara sauce doesn't have cream in it.

If you just want to heat up a sauce I would do something else.

Chef DP says you could try but likely to scramble & curdle

Scrambled eggs as others have said. Unless you do it with a cheese sauce instead and make it less authentic...

You wouldn't be able to if made the proper way. Even if made the "english" way, if you know what I mean (cream etc), I wouldn't bother. Carbonara is very quick to put together anyway.

I am unsure what you mean here as carbonara does not have a separate sauce as such so there is nothing to keep to reheat.

I am now beginning to wonder how the OP makes spaghetti carbonara.

How long could it possibly take to add some eggs (and, if making it the English way, cream) into a hot pan?

Cream has no place in carbonara Shock

No. Well you can. But you'll have cheese and bacon scrambled eggs on pasta.

Cheese and bacon scrambled eggs is a nice meal if you add some toast. Not if you add pasta. - that said , some of the dirty food threads leave me wondering
