Interesting lunches for the summer break?

I've just realised that I'll need to feed the kids all their meals now school/nursery is out for summer, and I really don't want to end up giving them sandwiches for every lunch!

Any creative ideas? ds is nearly 6 and will eat pretty much anything, dd is 3 and very fussy but LOVES salty things!

I've thought of quesadillas and eggy things but need other ideas please Smile

Jacket potatoes- half a jacket each? With cheese/ beans/ cottage cheese

Sweet potatoes with beans/ cheese?
Soup with pasta shells in it?

Crackers with nibbles...cheese/ cut up carrot etc.

Wraps.
Toasties.

Tuna, pasta, sweet corn, red pepper and mayo. Make a load will last a few days in the fridge.
Pita with falafel
Crudités, toasted pita fingers, breadsticks, houmous, guacamole, salsa
Bagel with cream cheese and smoked salmon
Fritata
Ploughmans style, cheese, pickle, apple, pickled onion (if they'll eat it!)
Sushi
Quiche

Sweet potato "wedges" (ie cut up sweet potato) with salsa
Potato skins
Pita pizzas
Make your own bean burgers/falafel

There's a really good variation of a quesadilla with baked sweet potato and chorizo, I think it's on the BBC. I use mozzarella but I think the recipe is for feta. So yummy!

Do you have a barbecue? Mine like to "help" so even if it's just sausages and a corn on the cob, the BBQ makes it special

Egg in a cup (cubed, buttered white bread mixed with soft boiled egg)

Quick cook pasta mixed with ham/ chicken / sweetcorn / cheese and so on

Microwave rice with the same kinds of things as the pasta

Toasted open sandwiches

Hotdogs

Scrambled egg on muffin

Pitta bread and veggie sticks with dips

Good ideas, keep em coming. I'm gluten free which can make things a bit more complicated...but happy to do my own lunch.
