So I'm visiting a friend who lives a couple of hours away by train (including one change) and I'm bringing lunch for three adults, two children. It needs to be veggie, gluten-free, child-friendly, and something I can either make the night before, or assemble very quickly in the morning before catching an early train. Or something picnic-y, but then I can't quite get my head round any kind of picnic without gluten .
All I can think of is Spanish omelette (with potatoes) plus a salad! I have been googling recipes but they all seem like they'd need more prep than I've got time to do, or not great for transporting by train.
Help! I am sure someone has had the same problem before!
