MNet cooking challenge: veggie, gluten-free, can transport on an early morning train....

So I'm visiting a friend who lives a couple of hours away by train (including one change) and I'm bringing lunch for three adults, two children. It needs to be veggie, gluten-free, child-friendly, and something I can either make the night before, or assemble very quickly in the morning before catching an early train. Or something picnic-y, but then I can't quite get my head round any kind of picnic without gluten Blush.

All I can think of is Spanish omelette (with potatoes) plus a salad! I have been googling recipes but they all seem like they'd need more prep than I've got time to do, or not great for transporting by train.

Help! I am sure someone has had the same problem before!

Veggie bean burger?

Most recipes are easy peasy and you just need some gluten free burger baps and some salad to go with them.

If you wanted picnic style just roll do a gf puff so you could make veggie sausage rolls or mini tarts. Fine to make night before. Combine with little cube of the Spanish omelette, falafel, crudités, crisps.

Lentil bolagnaise with quinoa?

You can cook the quinoa then microwave at your friends, or just buy those ready cooked packets.

Inspired by Weebo's suggestion, made these [https://www.bbcgoodfood.com/recipes/falafel-burgers falafel burgers]] with gluten-free buns and they were delicious! Definitely making them again. Yum.
