A tip rather than a full recipe, but steep the carrots and raisins (personally raisins are essential for me in a carrot cake) in 3 earl grey/lady grey teabags before adding to the dry ingredients - use some of the tea to loosen the mixture as well. All fragrant moist deliciousness.
It's my DP's birthday on Saturday and his favourite thing ever is carrot cake. I would like to bake one for him but need directing to a really good recipe? I've made one before which was ok, but I'd like one which is really delicious!
