I like the Robert Welch ones - or, the Japanese brand Shun ones are good but you can't put them in the dishwasher so a little bit of faff invovled

Aside from astronomically priced Japanese knives at £300 a pop, Global knives are pretty good and you can get them at Costco.

Honestly though? I was walking through Ikea one day and they had a knife demo on, so I decided to give it a try. Could not fault for quality, balanced knives that really retain their sharpness. I've had mine about 3 months now and I've stopped using my better knives as I just really love the IKEA one! £6.50 apiece, can't go wrong IMO.

I have a Tsuki 20cm cooks knife. It is carbon tampered stainless steel so it keeps a sharp edge. Well balanced. However money no object would be a custom made one.

Global - they've revolutionised my cooking, just so sharp. They quite often have them with 50% off on the achica website but you have to keep an eye out.

You see I've always found my cheapy knives to be the best. I've been given good knife sets in the past but they don't stay sharp. They shouldn't go in the dishwasher but somehow they always get put in and the sharpness goes. Try to sharpen them but with limited success. Ones I've bought from supermarket etc 20 years ago still great.

We bought a couple from IKEA , to use til we decided which to get. Have stuck with the IKEA ones (and the ceramic knife sharpener from Robert Walsh).

I've got Robert welch ones and they're good. Never dishwashed so they don't need sharpening as often

I bought a Japanese knife a couple f years ago that I got for just over £300, it's one of my most treasured possessions Grin

I have a Boots, Wusthof, Henkels, Robert Welsh and Victornox all chosen for their individual feel. They never go in the dishwasher, they need sharpened every time they are used...I would not buy a knife without feeling it in my hands first...beware - even the best brands have a few different levels of quality....so don't go on brand reviews alone.

I love my Taylors Eye Witness knives. I am biased as lived in Sheffield for 5 years but have used more expensive knives and didn't see the difference. In fact gave away a set of Wustoff knives as didn't like them as much. Also get a sharpener you are happy to use regularly. a kitchen steel is fine but if you find it a faff just get one you can slide the knife through.

Also don't get sold into the idea that you need a different knife for every eventuality. the only knife I wish I had which I don't is a filleting knife for fish... but then how often do I need to fillet a fish!

We've got amazing ones from Flint and Flame - look online - not cheap but well worth the money. I'd also recommend spending some money on a proper sharpener as well and taking good care of your knives (e.g. Not cutting on glass boards, having a quality knife block for storage etc) as we have found this makes a massive difference
