Vegetarian family meals?

After 40 years on the planet, DH is veering towards vegetarianism. I am the first to admit that my family suppers are meat-heavy, mainly because everyone eats it and I have a good repertoire of quick meals.

I am fine for veggie recipes that take a while, like curries and chillis that I can do at the weekend, but am struggling a little for quicker family meals. It doesn't help that one of the DC and I are pretty fussy over veg, and obviously it's different vegetables that we dislike - I don't eat swede, squash, sweet potatoes, or most rooty stuff apart from carrot and celeriac. DC2 doesn't eat mushrooms or aubergines.

I'd really like some suggestions to save us from death by pasta. We are all big fans of pulses if that helps.

Lots of salads in this weather! You can bulk them out with rice, quinoa, pasta etc.

Can you make veggie versions of things you usually eat to start you off, veggie bangers n mash with veg n gravy for instance?

thanks both - I'm not wild on quorny-type products, but if I can get vegetable sausages I'll do those. Dhal is already on the menu - it's a weekend one for us with some other curries.

A million kinds of Risotto ; lemon and thyme with parmesan, courgette, feta and mint, Red pepper. Speltotto.

Vegetable Fajitas with all the veg you do like

Veg satay skewers with rice

Roast veg with harissa cous cous

Veggie laksa

Veggie noodle soup

Home made pizza

Veg lasagne with whatever veg you like

Veg moussaka (though obvs contains aubergine)

Omelette and homemade oven wedges

A gazillion quick curries; Saag aloo, Saag paneer

These are all things we regularly eat.

Stuffed peppers with red onion, courgettes, chilli, cous cous and feta
Veggie stirfry with cashews and rice noodles
Puff pastry tart ( buy the ready rolled) with peppers, onions, tomatoes and mozzarella
Frittata
Halloumi on skewers with salads
Shop bought or batch cooked and frozen falafel with pittas and salads.

We're having a veggie week this week, I made this last night and it was bloody brilliant, recipe of the week so far and went down a storm with all!

Paneer kebabs are really quick. Just cube paneer and whatever veg you fancy, coat in curry paste and bit of oil, skewer up and grill. Really nice served with dhal and naan bread.

Balls it's the wrong way round, sorry! Ah well, you get the idea! Doing a sweet potato cannelloni tonight using sweet potato slices instead of the pasta

Sainsburys do a good range of veggie burgers for the freezer. Mediterranean spicy bean and lentil and spinach are our favourites. Good for mid week freezer teas and the non veggies can have something else.

For quick meals eggs and cheese are your friends.

Huevos rancheros with crusty bread is my DHs end of week favourite and he's a committed carnivore usually.
Omelettes, quiches,
cheese and onion pie/pasty

oh, pulses: tinned chickpeas=falafels.
and while we're in the can cupboard (in mine the pulses are next to the coconut milk) : thai curries are super quick to cook compared to indian ones so good for midweek.

excellent - these ideas are great
I'm afraid we have a risotto refuser in the house as well, and I'm too lazy to cook more than one meal.

Paneer kebabs sound amazing.

If you like paneer, paneer masalla or mattar paneer are lovely and usually go down well with children.

Nigella's mattar paneer is easy and not bad, although I like to add more spices. here

And Fresh India's paneer butter masalla is amazing

For burgers, we tend to just roast big mushrooms with garlic and s&p and shove into rolls with salad and chilli sauce. Add fried haloumi if feeling extra greedy.

I lived with my in-laws for a few months and converted a house full of meat eaters to loving veggie lasagna! Basically assemble like a normal lasagna, alternating red and white sauce on each layer, and in the white sauce layers I use spinach and leeks and on the red sauce layers I use tomatoes and courgettes. They request it all the time now as it's a family favourite!

Hugh Fearnely Whittingstall - Veg Every Day is a really good book for family meals with some great quick ideas.

We often have roasted veg with feta - or omelette with loads of veg in as quick meals.
