Veggie/vegan/pecetarian child recipes for one

I am a lone parent to DS (5) so there are just two of us at home. I don't get much time to cook for him and it's not my biggest skill.

I am looking for simple recipe/meal ideas to serve just him - at the moment he eats fish fingers/pesto pasta far too often...

Any suggestions welcome..

Why are you just cooking for him not both of you? Personally I find most recipes lend them self to serving 2 or more.
Frittata
Home made fish cakes (good to make a batch and freeze)
Tuna pasta
Gnocchi bake with spinach, basal and tomatoes just make in small dish for one.
Red pepper stuffed with cous cous and veg
Stir fry veg with cashews and noodles
Make a veg and bean chilli serve once with rice, once on a jacket and once in quaesidilla
Salmon fillet brushed with honey and whole grain mustard with veg

Risotto is easy to make for one
Stuffed mushroom
Home made bean burgers
Jacket potato with various fillings

Beans on toast!
Beans on toast with cheese under the beans
Pittas with hummus and grated carrot
Wraps with whatever he likes in them - you can get multi-seed wraps which makes them a bit more nutritious
I buy Staffordshire Oat Cakes (Tesco and JS both sell them) and keep them in the freezer. You can then defrost one or two at a time and treat them like savoury pancakes (cheese, pesto and cheese, other toppings that they will eat)
Potato farls with beans and/or scrambled eggs.
Egg noodles with some kind of sauce and protein

I find it's the carbs that often take the time, so when wanting to do something quick just for a child, I find having fairly ready-made carbs really helps.

I'm vegetarian but my two children are meat eaters but we eat a lot of vegetarian food, some favourites are
-Veg noodles, I adjust to whatever veg my kids like, they especially like baby sweet corn
-pasta, either with hidden veg tomato sauce I've made, cream cheese and peas, quorn meatballs
-rissotto, can vary ingredients for whatever u have in the cubboard, butternut squash is a fave here
-quesadillas
-cheese on today

  • poached eggs, scrambled eggs, boiled eggs

-pizzas
  • veggie sausage tray bake, bake sausages potatoes and veg with whatever herbs and spices you like

-tacos, you could put fish in his
-jacket potatoes
-fish baked in foil, could add veg and potatoes in there aswell
  • homemade soups served with cheese toastie soldiers for dipping

Quorn sausage hotdogs with onions
Individual toad in the hole with Quorn sausages
Tortilla wraps - kids favourite when young included - peanut butter with a banana on top, drizzled with honey and sprinkled with ground almonds
Let him choose filling for wraps, taco shells, pita breads - cheese, peppers, onions, tomatoes, cooked quorn etc
Individual vegetarian shepherds pies
with the individual items, batch cook and freeze for next time
