Irish recipe for school stall

It's DS's school fair tomorrow and they're having an International Food Stall. I'd like to bring something Irish (we're second generation) but struggling for inspiration. Baking is probably best just for portioning and portability - treacle scones? Potato cakes? I ideally want something that doesn't rely on being warm from the oven and butter to be at its best! All inspiration welcome!

I know! I was thinking Guinness cake / porter cake / Baileys cheesecake but alcohol (and nuts), are totally forbidden! The thing with soda bread and jam is that it sounds like that'll be messy with a load of 5/6/7/8 year olds! But maybe buns could work.

Actually you could make soda biscuits:


Ingredients:
2 cups plain flour
3/4 cup granulated sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
pinch of salt
1/2 cup butter
1/2 cup currants or raisins
1/4 cup buttermilk
1 egg, slightly beaten
1 teaspoon caraway seeds
Method
Preheat oven to 350°F
Lightly grease cookie sheets or line with parchment paper.

  1. Combine flour, sugar, baking powder, baking soda, and salt.
  2. Cut in butter until mixture resembles coarse meal.
  3. Stir in currants.
  4. Blend in egg.
  5. Add buttermilk and mix to make a soft dough, use more buttermilk if needed.
  6. Knead 5 to 6 times.
  7. Roll out on a lightly floured board until 1/4" thick.
  8. Cut into triangles and place on cookie sheet 2" apart.
  9. Bake 12-14 minutes or until golden brown.

Transfer to wire racks to cool.

Fifteens are a sort fridge cake I think. I have only really heard about them on here
