Simple meals for evening

Hi all

DH is going away for two weeks and I have two DS both under 2!

I needed some ideas and help with easy evening meal preps or stuff I can make and keep on the fridge and just re-heat.

I mainly want help with easy meal preparation and cooking during the evening.

What do you busy Mums make which is filling and quick.

Bolognese is a good one, it always tastes better reheated, same with lasagne.
Homemade fish and chips, can be made in advance and kept in the fridge.
Chilli, quick and easy and nice reheated.
Jacket potatoes with various fillings.
Cold foods like sandwiches with veggie sticks and houmous, yogurt etc

Pasta bake is another good one and so easy, just put the dry pasta in a dish pour over the sauce, fill the jar with water and pur that over too, mix put in the oven for 30 mins, sprinkle grated cheese and some mozzarella over the top in the last 10 mins of cooking, serve with veg or salad.

Will you have an opportunity to prep in advance (nap time?) so it's just a case of putting things in the oven later?
Are you happy to 'cheat' along the way?
Some speedy old favourites here are
Cod fillets marinated in a curry paste and yoghurt mix then baked in the oven (spread mango chutney on top for the last 5 mins, it's delicious).
Salmon fillets with honey and mustard baked in the oven.
Pasta with philli, peas and smoked salmon stirred through
Bag of Sainsbury's roasted med veg baked in the oven then added to beaten egg and return to oven for frittata.
Chicken breasts dusted with paprika and baked in the oven.
Tuna pasta
All get served with salad, cous cous, baked sweet potatoes, veg basically whatever is to hand and is quick!
I would be tempted to batch cook a tomato sauce in advance that could be adapted for pasta/bolognaise, chilli, etc
I would also make some falafel and fish cakes in advance that again can just be popped in the oven when needed.
And there's nothing wrong with jacket potatoes with beans and cheese or scrambled egg on toast.

Spread tomato puree or refried beans on a wrap, add any chopped veg (red pepper, spinach, carrot, onion, cherry toms), grated cheese and if wanted any cooked meat (ham, chorizo anything!) Top with another wrap and then dry fry in a pan on a medium heat flipping over half way through. It's yummy and kids love it x
