Help me use up some frozen sweetcorn

Due to a shopping miscommunication I have 2 large bags of frozen sweetcorn half-filling my tiny freezer (and so no room for summer treats, lollies etc!).
If you've got a great (vegetarian) recipe which would help me use some of it up, let me have it, or more general suggestions of what I can make with it. Feeling uninspired.

Ooh, I love frozen sweetcorn. We always have a bag in the freezer.

Have it as a side veg, defrost it for tune sweetcorn mayo sandwich or with salads, add it to one pot stews....

We blend sweet corn with a dab of butter to make it like mushy peas. So yummy, with sweet potatoes.

Also, in a sweetcorn and onion flan.

I always use it in bean casserole too. Carrot, sweetcorn and peanuts or peanut butter is good in a sandwich. Sweetcorn and nuts and raisins in salad or coleslaw...

Cream of sweetcorn soup is lush. Has the added advantage that half the corn doesn't come out the other end whole and undigested (TMI?).

Sweetcorn, chopped bacon, Avacado, gherkins, onions, Peppers. Makes a nice side or lunch

Oh yes, sweetcorn chowder! Sweat onions, diced potatoes, garlic. Part cover with water and cook till soft. Add sweetcorn and milk or cream and heat gently. It makes a chunky soup, lovely with crusty bread.

corn chowder, corn pakora, blanche and use in pasta salads, sandwiches, pretty much anything: it's good hot or cold.
There are much much worse things to be stuck with a batch of!

Sweet corn, grated ginger and chilli, blitzed together to form a sort of thick soup. Put in bottom of wide deep bowl. Then steam some bought gyozas and place them on top of the soup. Top with shredded sugar snaps and coriander and bean sprouts and chilli sauce or similar.

Sweetcorn fritters, put sweetcorn in a quiche, omelette or frittata, or in a curry or veg chilli.

This sweetcorn polenta is absolutely delicious and I am sure it would work with frozen. Serve it with the aubergine in the recipe, or use it as a mash substitute. I also like to eat it in wraps with a few chickpeas and roasted veg.

I make a similar sweet corn salsa to the JO one above but I add avocado so it's like a cross between guacamole and salsa. I dry fry frozen sweet corn until it's 'toasted' then mix with the other ingredients with a generous slosh of lime juice.

I'd be recommending bean pastas, casserole, perhaps Quorn fajitas/stir fries etc.

Alternatively, make a massive batch of popcorn and have a movie night.

Recipe wise, thus:

Quorn chilli and lime sliced fillets (1 bag)
Cup of sweetcorn
Cup of peas
Long-grain or basmati rice (1 cup to feed 4)
2 large eggs (assuming you do eat eggs!)

And make egg fried rice with peas and sweetcorn, serving the chilli and lime fillets as the "main".

Delicious.

Sweetcorn fritter
Add it to a pasta bake with chicken
Make chicken and sweetcorn sandwich filler
Or if you're weird like me, cook it put in a cup or bowl add some butter and chilli powder and eat it on it's own Grin

This is brilliant (sorry about mixed metric/Imperial measures - I'm afraid I cook like that!)

Cheese and Corn Flan (for three large portions)

1 tablespoon oil 125g (4oz) Cheddar cheese, grated
1 onion, chopped 2 tablespoons chopped parsley
1 celery stick, chopped 175g (6oz) wholemeal pastry
1 clove garlic, crushed salt and pepper
2 eggs
150 ml (quarter pint) milk
175g (6 oz) frozen sweetcorn kernels


  1. Heat the oil in a pan, add the onion, celery and garlic and fry until softened.


  1. Beat the eggs and milk together in a bowl, then stir in the sweetcorn, onion mixture, cheese, parsley, and salt and pepper


  1. Roll out the pasty thinly and use to line a 20cm (8 inch) flan tin


  1. Spoon in the filling and bake in a preheated oven, 200 degrees C, 400 F, Gas Mark 6, for 30 minutes. Lower the heat to 190 C, 375 F, Mark 5 and cook for 15 minutes. Serve warm or cold.


Do not make the pastry case in advance and leave it in the fridge – soggy bottom


Increase in quantity for four servings: 4 and three-quarter oz cheese, 7 and a half oz sweetcorn, 3 eggs, just over quarter pint milk, 8oz pastry

Ooooo I love sweet corn in soup - often Thai chicken and sweet corn but just replace the chicken with something else if you're vegetarian.
I also make blended veg soup with butterbeans, squash, garlic, shallots potatoes and coconut milk, blend it but add sweet corn st the end to make it a bit more crunchy - yummy
