Easy no-bread lunches to bring to work?

Just that - I usually bring a sambo into work, but lately I'm eating toast for brekkie, then sambo for lunch and quite often pasta for dinner and my little pot belly is paying the price.

I usually make up my lunch the night before, need something quick to throw together that will keep me full for the afternoon. Anyone any nice ideas?

I make a huge frittata on a Sunday with the odd veg in the bottom of the salad drawer plus potatoes and what ever random cheese is left. Then cut into wedges and keep in the fridge gen just grab n the morning and have with salad.

Rice salad, bean salad, sushi. Can add meat/nuts to make more interesting.

Cous cous with peppers, spring onion, cucumber, gherkins, cooked, chopped chicken breast
Tuna pasta
Sweet potato salad

Buddha Bowls are basically vegetables, whole grains grains, protein and dressing.

You can put anything you like in it.

Sambo = sandwich.
Salad with cheese or meat pieces plus crackers.
Soup with crackers.
Fritatta/crustless quiches are nice too.

Usually leftovers from previous evening!


So. chunky soup, stew, pasta and sauce, curry, cauliflower cheese, fritata.

Today's little tupperware box contains a half a turkey breast chopped up, some leftover pasta in pea and brocoli cheese, and a handful of sauteed peppers and mushrooms, which were the filling for last night's quesadilla.

Buddha bowls for me too. Filling and healthy.

My colleagues often comment on the size of my lunch as I can pile in as much salad/veg as I want.

Lettuce wraps.
Big lettuce leaf, slice of ham or a few slices of cheese, coleslaw and some other sliced veggies and then roll up like a wrap.

I often make an extra large rice salad to go with dinner and then pot up any leftovers for my lunch the following day.

Noodle soup pots with rice noodles, veg, stock cube or tablespoon of curry paste, teaspoon peanut butter. Add water at work. I put a small bag of herbs and chilli at the top of the pot to add after. They are quick and simple and easy to make up in batches

I make some lemon quinoa (enough for 3 days) then add bits the night before. Some salad, feta cheese etc

The other thing I do is roast loads of veg- sweet potatoes, courgette, aubergine, garlic with balsamic oil then add feta cheese once cold and olives. Tasty and filling

Mix together a tin of brown lentils (drained), 1 chopped spring onion, half a red pepper, chopped, handful of rocket, 100g crumbled feta, 2tbsp olive oil, 1tbsp balsamic vinegar, pinch of herbs or chilli flakes. Mix together. Serves 2.

I used to bother to make lovely lunches but in the past couple of years after cooking, tidying and doing whatever other jobs it's the last thing I want to do at 9 or 10pm at night so my lunches are extremely lazy... usually literally just salad then I take a pot of eg hummus, pate, cottage cheese, salmon, tuna etc into work and add that at lunch.

Or any left over chicken/ roast veg etc I will use
