Pork fillet help

So I saw a recipe for paprika chicken with tomatoes and peppers, and at the bottom it said to use pork instead of chicken for a change. I don't think I've ever cooked pork in my life (memories of horrible dried out pork chops from my childhood) so thought I'd be brave and try it!

I've got some pork fillets.....can I just chop them up and fry them like a chicken breast? Or do I need to do anything special? Google hasn't helped!! TIA

Bash till thin, egg and breadcrumbs, fry. Yum

Thanks oldgranny sounds yummy. If I was doing it in a tomatoey sauce can I chop it up into chunks and fry?

Bash and sprinkle with salt, pepper, chilli flakes and then stick a couple of basil leaves on and wrap in Parma ham or prosciutto

Bash (again!) and do saltimbocca? Easy to find a recipe online

Or cook then in a creamy mushroom/mustard sauce

Yeah just cut up and bash and treat as a bit of chicken breast. Like chicken there is no fat on this cut of meat to keep it moist so don't over cook it

Thank youl! It's cut up and awaiting it's fate as the frying pan heats... fingers crossed it's edible once I'm done with it Grin

Try the Hairy Bikers pork tenderloin with ginger,apricots and apples, use cider or sherry instead of ginger wine, yummy.
