Do you have a healthy Instant Pot recipe please?

I have bought an instant pot and so far I've just stood looking at it, I have no idea what to cook in it all the recipes I've seen seem to be centred around a Mexican bean theme!

Please share with me your favourite instant pot recipes!

I'm a vegetarian but dh isn't so any and all recipes welcome, thank you.

PS-It's worth getting the Vegan Under Pressure cookbook, a lot of vegetarian instantpotters absolutely love the recipes there. In the recipes above just remove for example the sausages and you still get a lovely pasta, remove the chicken from the biryani and add quorn instead if you like it (paneer might be lovely too). Same with the risotto, what you really want is the method, just swap ingredients to suit you.

You also don't need to make a whole recipe in the IP. You can use it for short cuts, like dried chickpeas in 15 or so minutes or parboiling potatoes. I cooked small new potatoes yesterday for sag aloo in one minute at pressure. It doesn't like a lot of tinned tomato so don't mix it in. Add it last to keep it away from the bottom or it can burn and turn itself off. It's a great machine but you need to learn its ways.
