Batch cooking

Planning on doing some batch cooking this Sunday. I am going to make -

- stir fry (not a quick one so want to batch cook)
- leek and potato soup
- enchiladas (put them in the oven on the day)

If I did all of this on Sunday, would one of the dishes keep until weds? (So one dish per day)

What's in your stir fry? I don't think they respond well to keeping.

Either the soup or the enchiladas would be fine in the fridge until weds.

Maybe I just prep the stir ft veg the night before...thanks for responses all!

Yeah stir fry night before is fine, soup and enchiladas will be fine

I wouldn't batch cook stir fry. The soup and the enchiladas will freeze, though.
