Summer slow cooker recipes?

I want to use my slow cooker more for dinners we can all eat - luckily dd (5) and ds (2) are not all all fussy, but in just running out of ideas!

Tonight I made lamb tajine in the slow cooker then made quinoa to go with it.

Tomorrow I'll do a Thai coconut chicken thing with rice.

But what else?! My brain is fried.

Please tell me your favourite slow cooker family faves.

I have only just joined this forum as I'm looking for advice about cooking for my dd, so don't know how much help I will be! But I use my slow cooker all the time, all year round as I have 4 kids and work full-time. We often have a hearty casserole in summer, it's not traditional, but it's convenient! I just tend to vary the accompaniments a bit. So maybe rice and crusty bread instead of spuds and veg? A bit of grated orange or lemon zest over a casserole freshens it up a bit and makes it more summery. Or serve with Mediterranean veg. Thai chicken curry with jasmine rice?

Sauces like bolognese and marinara do lovely in a slow cooker as long as meat browned first. Then you only have to cook your pasta.

I do a piece of gammon in the slow cooker - like a fiver or something from Aldi etc - then it's nice with potatoes/rice/salad

I've made Delia's chicken basque in a slow cooker - the rice doesn't keep its texture as well but it's still great!

Placemarking as looking for ideas. I do bolognese and curry in the SC all year but would love some other ideas for summer.

The slow cooker things I already do are usually parts of meals - like leeks in butter, so I just fry a piece of salmon, or ratatouille to have with a piece of chicken.

I like not having much to do when I get in and everyone's hungry, but without having to get hot and bothered.

Following - I am guilty of only cooking bologanaise in mine. In my defence it is only me and 2 very fussy children, and apart from chicken nuggets is the only meal that is the same that they will eat!

I need some motivation to try new things..... so easy to fall in the trap of simple meals that they will both eat to save me cooking 3 meals every night
