Chicken Thighs

Can anyone recommend a nice recipe to use up some chicken thighs?

We like Nigella's chicken tray bake. I add chunks of pepper, cherry tomatoes and whole cloves of garlic (still in the skin) to mine. I cook the chicken and potatoes for half an hour, then add the rest of the ingredients and cook for another half hour. If they all go in at the same time, the chorizo and vegetables get burnt.

Another nigella recipe.....

Olive oil in a roasting pan. Rub chicken skin in oil, turn right way up. Add new potatoes halved, chorizo big chunks, diced red onion. Sprinkle with oregano and the zest of and orange. Roast, bast half way through, see with a nice big salad.

This is a recipe I love doing with chicken thighs:

2bsp olive oil
500g chicken thighs
flour for dusting
50g pancetta
300g small button mushrooms
2 shallots
250ml chicken stock
1tbsp white wine vinegar
50g frozen peas
small handful of parsley chopped
A clove of garlic, crushed/finely chopped

heat 1tbsp oil in a pan, season and dust chicken with flour, brown on all sides.
Remove the chicken, fry pancetta and mushrooms until softened and remove.
Add the final tbsp. of oil and cook the shallots for 5 mins, add the stock and vinegar, bubble for 1-2 mins, return chicken, pancetta, and mushrooms, and add the garlic, cook for 15 mins then add peas and cook for a further 2 mins.

I serve mine with fine green beans and baby potatoes or mash.

we usually do jerk chicken with rice n peas... but daughter loves paleo chicken thighs. www.theendlessmeal.com/korean-paleo-chicken-thighs/ Except we just do the chicken with some sweet potato wedges and corn on the cob

I'd say two but depending on the size you may need 3.

Sorry just realised I was posting only about skinless/boneless.... other recipes we love with chicken thighs .... Rachel Khoo chicken and lavender, nigel Slater - chicken, basil, lemon and garlic, ottolenghi chicken with clementines and Pernod....

I buy a pack of six I think, or the packs of 4 thighs 4 drumsticks, and expect to feed 3 adults and 3 kids as there's so much veg with them.
