Cake repertoire thread for recipe sharing (aggressive baking inspection)

I've got a banana cake baking in the oven (taking it to playgroup tomorrow morning to share around) and just thought I am lacking a good coffee cake recipe... and a lemon/orange poppy seed cake recipe, gooey brownies etc etc.

I have some cake recipes that are my go-to, never fail holy grail ones for certain types of cakes though and thought we could share maybe?

So, mine are:

Banana cake/loaf
Tana Ramsay's lemon drizzle cake
Nigella's chocolate Guinness cake
Dan Lepard's caramel fruit cake
Gluten free carrot cake
Swedish very gooey chocolate cake

Also related to cake, I have an excellent salted peanut butter American-style cookie recipe.

Any takers? Cake Or recipe offerings for wanted cakes? Grin

YY to Nigella's Guiness cake.
Saveur's carrot cake recipe from 2003. Unusual in the quality of carrots used (750g!), but delicious.
Pierre Herme's chocolate sable recipe - I always have some in the freezer
Guardian's recipe for sticky toffee pudding
Paul Young's chocolate marmite brownies

The Be-Ro choc chip cookies are more cakey than chewy but yummy -
75g marg
75g brown sugar
1egg
Few drops vanilla ess
150g SR flour
Pinch of salt
100g choc chips (I use milk choc)

Cream marg and sugar
Beat in egg and ess
Stir in flour, salt and choc
Put on baking tray in flattened blobs
Bake 180 for10-15 mins

Ooh thanks! I already love the Guinness cake but I will be looking up Nige's brownies, been needing a failsafe recipe for ages there.

Okay American style big chewy cookies:
250g plain flour
1/2 tsp baking powder
1/2 tsp salt
170g melted butter
200g brown sugar
100g caster sugar
1tbsp vanilla
1 egg
1 yolk
(Whatever extras you want: e.g. 1 tbsp peanut butter, 325g choc chips, raisins, M&Ms, nuts etc)

Preheat oven to 170C. Cream butter and sugars. Beat in vanilla and eggs. Mix in dry ingredients. Stir in extras. Put round balls of dough on tray and squish slightly flat. Bake 15 mins.

I think I originally got this from the allrecipes site online. It makes 16 big, sweet slightly salty, crunchy edged, chewy-centred cookies with the crinkled top. Bloody delicious, I might make some today actually.

Nigella's white chocolate, cranberry and oat cookies from Christmas are amazing as well. Can sub raisins for the dried cranberries for a less festive cookie.

When you need an egg free dairy free gluten free cake .... The wacky or depression cake from sweet humingbird with dove gluten free flour and an extra tbsp spoon of water works. Get a soft brownie feel. But mix v well

Here is the carrot cake recipe. I've decreased the sugar by 20% without much difficulty if I use the icing the recipe provides.

Full fat. I also decrease the amount of icing sugar in the icing - American icing tends to be overly sweet for my taste (and I am American!).

Mary Berry's whole lemon cake using two lemons.
Dan Lepard's meringues.
Mrs Field's blue ribbon chocolate chip cookies - using any chocolate sweets or toffee I have in the cupboard.
Delia's ginger nuts.

For coffee cake, I've made mocha cupcakes that received very positive comments and you could always bake it as a single cake. I can't remember which of 2 recipe books I got it from so will have to check when the baby lets me up.

They are from Cupcakes from the heart by Samantha Blears. I'll try and attach a photo of the recipe but I've never added an attachment before so apologies if it fails!

I decorate with chocolate fingers.

I can highly recommend Nigellas lemon meringue cake
My go - to's are
Courgette chocolate brownies
Carrot cake( honed by baking one a week until right , ready for DGS christening.!)
Lemon drizzle
Banana loaf - ( I put in raspberries as well when I have spare )

Would anyone have a foolproof lemon meringue pie recipe? I'm a good baker, but have tried this 3 times in the past couple of months..3 different recipes, and none of them worked for me. The lemon just ran off the pie.
