Give me some meal ideas

Work evenings, so don't get home till about 8:30, need some quick, easy healthy meal ideas.
I do batch cook, but don't want heavy meals like casseroles, stews etc.
Any ideas would be great.

I often do noodle stir-frys if I'm in a bit of a rush. Fry some chicken / prawns / quorn in a wok and then once nearly cooked add some noodles, stir-fry vegetables and your choice of sauce. Only takes about 15 minutes.

Other options are pasta in sauce; or grilling / frying some meat / quorn and serve with rice. Salads are also a good option if you aren't worried about dinner being hot.

Fish cooks really quickly. I put white fish fillets (usually cod) in a bowl containing a mix of yoghurt, a curry paste and mango chutney in the morning and leave to marinate in the fridge all day. Then when you get in in the evening just put the fish on a baking tray and in the oven for 15 mins ish and serve with salad.
Frittata is my other really quick go to meal.

Oooooo that fish cake idea sounds good.
Stir fry tends to be my go to. I can only eat so many noodles before I become one. Sad

Frozen Mediterranean veg and chopped chicken breast in an oven tray with Cajun spices, garlic powder, a crumbled chicken stock cube and salt and pepper -bang it in the oven for 15 mins. Add cous cous and pour over boiling water, stir then cover with cling film and leave for 6/7 mins. Uncover and stir again, scraping any good bits from the bottom of the oven tray and serve with natural yoghurt, hot sauce and hot sweet jalapeños on top.

Pasta with some peas, broadbeans abs asparagus and a bit of cream cheese is delicious and very quick.

Strongaoff is quick

Home made bean burgers, they freeze well too.

Fish or chicken tika with rice and salad.

Mix some plain yog with tika spice and a bit of oil, rub all over fish or chicken strips.

Grill under a high heat for 6 mins for fish and 8 mins for chicken.

Meanwhile do some

  • microwave basmati rice
  • plain yog mixed with mint sauce
  • salad of cucumber, onion, tomato and fresh coriander

Pasta carbonara with a green salad. The 'authentic way' with sir loads of Parmesan and black pepper and no cream is like a thing of seriously amazingly yummy ness.

I like to make big salads, making them more 'hearty' with some of the pre-cooked pouches of mixed grains.

I'm a big fan of Tom yum soup - just mix the paste with boiling water in a pan on the job and add mushrooms, prawns and some other veg like baby corn if you like

This is my semi jambalaya. Start frying frozen chopped onions, and chopped chorizo then a chopped red pepper. Tin or two chopped tomatoes, paprika, then chicken- I usually add leftover from a roast. Then heat up precooked rice and stir through. Nice with frozen peas in it as well. One of the few dishes that we all like.

Sushi bowl

  • Pack of microwave brown rice
  • Frozen edamame beans cooked in microwave
  • Cucumber cut into thin half moons, mixed with a bit of Chinese vinegar and sugar and salt. Actually do this first so they have time to mingle a little bit whilst you're dealing with other things.
  • Fish. Ether smoked salmon cut into strips, or some tuna sashimi, or cooked tuna, or even smoked mackerel. Whatever really.
  • put the rice in a bowl and arrange the toppings. Sprinkle over some sesame seeds and add chilli flakes and soy sauce to your taste.

Chicken or veggie fajitas are really quick to do. I bulk premix a 'fajita seasoning' that I keep in a jam jar so all I have to do it fry up the veggies and chicken with oil, squirt of lime juice from a bottle and several tablespoons of fajita mix.

Hearty soup with nice bread. Delicious, nutritious and cheap.
Corned beef hash
Petits pois, caramelised onion and bacon bits
Scrambled egg and runner beans
Stuffed tomatoes or stuffed peppers
Sausage and sweet potato mash
