Too tired to do the dinner I planned.....and it's also now too late.........

what on earth shall I do instead?

Was going to do a turkey stew/curry type thing in the oven with some diced turkey (thigh I think - I know it says 1- 1 1/2hrs cooking time on the pack) tinned toms and an assortment of veg. But I'm shattered and really can't be arsed..........I have the above mentioned meat or could raid some of the other stuff I have (which I can't remember at the moment - though think I've got a few sausages left) any really quick and minimal preperation ideas for me.......has to be ready by 6.30 latest really....

If you cut the turkey bits up small you could cook them on the hob in about 20-30 mins, I think?

It wouldn't be as stewy but would be OK.

Don't you have some rubbish in the freezer you can quickly grill? Fishfingers, beefburgers, turkey twizzlers? Oh no, silly me, this is Mumsnet!

Do a turkey & veg stir fry instead. Have you got onions, ginger, garlic and soya sauce?

Serve with rice, noodles or anything basically!

beans on toast when all else fails.Healthy cheap easy and most people love it!

Veg stirfry - do you have those straight-to-wok noodle things?

Or pasta with sausage & veg sauce - fry sausages & cut them up (so no-one can say there aren't enough) add veg & tinned toms, slosh over pasta.

Gourmet cuisine in this house during the week - can you tell?

I hate days like that. Happen regularly round here.

It'd be egg and chips or something here. (Or sending dh out for a takeaway, quite likely, but I don't suppose that's an option for you)

problem is it's not breast - it's thigh (just checked the packet) and it takes longer to cook - so stir fry a bit awkward...

Noddy - my men (DS's and DH) wouldn't be very happy with beans on toast for dinner - they'd be asking for "dinner" 20 minutes later LOL.

Might try chopping the turkey into smaller pieces and sticking on the hob.......or may I'll just go for sausages and scrambled eggs and toast for the boys and think of some way to make it a bit more filling for DH when he gets in later

This is easy:

Put turkey in with tomato puree (or tinned), tablespoon of worcestershire sauce, tbls soy sauce, tbls honey. Then stir fry some peppers, onions, veg and garlic, add the turkey and a bit of water to thin it out. Add ginger and chilli (just ginger for the kids). Serve with noodles.

For thigh, add it just before you put in the veg and simmer the lot for 30mins, adding more water occasionally.

stir fry
cauliflower cheese
pasta in tomato/garlic sauce

Or - cook tinned tomatoes with garlic and some salt, pour over the turkey and bung in oven for an hour or so - towards the end stick some grated cheese on top then serve on some pasta?

purple - it's because I worked last night and haven't been to bed since I got up yesterday morning at 10.30am. I usually manage to grab an hours kip at work (shhhh don't tell the day staff - it's a secret LOL) these days and then 'veg' on the sofa all morning - but we had to go looking at washing machines this morning so I never got my 'snooze' waaaaaaaaaaaaaaaaaah.

Typical - I've now got the DS's shouting up the stairs to me "what are we having for dinner".......can't get DH to get a Take-away as he's at work the other side of the county and won't be back until gone 9.30pm. Also - I want to keep the take-away option open (vaguely - as we really need to be saving money to replace dead washing machine) for tomorrow as it's my birthday.

My ds and dp must be easily pleased as they love beans on and often have it when none of us can be a*d which is at least once a week!

oh don't get me wrong - they like beans on toast (excpet it means I'd have to go to the shop - in which case I'd probably end up buying pizza anyhow LOL) - it's just they'd see it as a snack.........
