Holiday meal planning ideas

Hi,
We're going away as an extended family for a week to celebrate my mums birthday. Usually she cooks for everyone but we want to share the load. The thing is we've got quite a requirement list so I need some ideas!
Two vegans
One veggie who is dairy soya free
Three omnivores
One picky four year old
One baby who will be blw (df/sf)

Not too worried about the children as they're mine so can sort them!!

Any ideas?

A big bean and veg chilli, with rice, could do a meat one too if you want to.
Maybe similar with curries a chicken curry and and a BNS, red pepper and chickpea curry with sides suitable for all.
Falafels in pittas with various salads
Baked potatoes/sweet potatoes with range of toppings.
Red onion tarte Tatin, (just roll puff is vegan) if you want a meat
alternative you could do a tomato, chorizio, onion and mozzarella.
Do you know what the cooking facilities will be like? Do you need 3 Meals a day?

We're staying in a cottage which has all the mod cons and an electric aga. We'll sort our own breakfasts and will have picnics or eat out at lunch.
I'm thinking adaptable food will be the way forward eg stir fry with or without chicken.

Does the cottage have a BBQ? If so then that could be quite a good option one night - burgers, sausages and steak for the meat eaters and then the vegan equivalents (available in most supermarkets) for the others....Then baked potatoes, salad and bread as sides for everyone

Fajitas are really easy. Everyone can make their own with veggie and meaty fillings on offer. All the sides, refried beans, guac etc, big bowl of salad.

Has anyone used an electric aga?!

I have an electric Aga - use the ovens as much as possible and don't lift the lids as the ovens will loose heat. If you're frying off onions etc get them really hot on the hot plate then put in simmering oven to continue to cook. Same with boiling veg - boil on hot plate, tip most of water out, put lid on and place in simmering oven. They'll steam - will take a little longer than boiling but they'll happily sit for longer without going mushy. Curry,chilli etc is ideal as you can bung it in the simmering oven and leave all day to cook. Good luck!
