Most decadent macaroni cheese recipe?

I'm menu planning for the weekend. I've got a major hankering for macaroni cheese. (Probably because I'm having a serious diet for 3 days to get rid of holiday weight and all I can think about is food!)

Please share with me your favourite macaroni cheese recipe

Jamie Oliver has one that doesn't use the flour/butter thing it's just like 4 different types of cheese melted into pasta and it is UNREAL.

Make a cheese sauce with just cheese and cream!

1 cup of double cream
1 cup of cream cheese
2 cups of grated cheddar
Melt together over a gentle heat, stirring occasionally.
Season to taste.

This makes the most amazing cheese sauce, add to pasta, add extra grated cheese and bake in the oven until golden and crispy.

Also makes great cauliflower cheese.

Fry streaky bacon snipped into bits until crispy while you make the pasta- when cooked stir in loads of pesto. Then add peas and the crispy bacon. Add cheese sauce and stir gently so not completely mixed. Top with more cheese and bake.

I base mine off a Delia recipe. Fry some leeks, bacon and chorizo and chuck that in. Make a white sauce and melt a load of cheddar. Top with cheddar, pecorino and breadcrumbs or crushed up ready salted crisps. It's heaven! grin
