Victoria sponge cake

So just attempted making one and I don't think I left them to cool long enough before adding cream so the cream started to drip off.

I'm going to attempt it again later, but is using double cream and whipping it ok to use?

I cooked the cake waiting 5 minsblush then put jam on the one, and spooned the cream on the other, put the cream part on top off the jammed piece and it slid off shock any tips? Or just wait longer to cool..?

Yes leave to cool completely and whipped cream absolutely fine . X

You really need to let the cake cool completely before filling or icing it.

I take the cakes out of the oven, let them cool on the tins for 10 minutes then tip put onto a wire rack and let them cool down for a further hour before trying to fill. If you try to handle thd cakes before they are fully cooled they ae more likely to break, plus any cream filling will melt.
