Vegan picnic recipes?

Any ideas much appreciated!

So far I'm thinking hummus and carrot sandwiches (how original of me) Grin, fruit, nut and seed mix and Wine.

How about grilling or roasting some veggies and doing a little stack on cocktail sticks like an aubergine cube, courgette slice, cherry tomato, and brush with garlicy basily oil? Any kind of rice/grain salad might be nice too! Try this Ottohlenghi recipe for cauliflower tabbouleh. I was so dubious the first time I tried it but it's properly delicious!

Baba ganoush and falafel or mashed avocado with chilli flakes, salt and sesame seeds as dips or filling for sandwiches; Samosas, pakoras and mango chutney?

Aldi do different flavoured falafel so these with a big salad (chopped lettuce, grated carrot, grated red cabbage, sliced green beans, chopped brocolli, tomatoes, beetroot sweetcorn etc) and good old hummus and bread rolls or wraps. Make the sandwich at the picnic so the bread doesnt get soggy! Veg soup in a flask is good (again no dairy or non veg stock). For dessert - Cut some dates in half. Take out the seed. Fill with peanut or almond butter. Freeze. After a couple of hours melt some dark chocolate (make sure it's vegan. Most are). Dip the dates in the chocolate (it dries almost immediately ) put a little bit of salt on top of wanted. These are delicious.

I had an amazing sandwich for lunch today.
Mung bean cashew and raisin burger with avocado and sriracha .
It was so so delicious even cold (was having a picnic with the kids)

Definitely want to make those dates and will get some falafels, samosas etc too.
