I'm a little bit clueless when it comes to fish as I've only been eating it for a couple of years so not sure of the rules around freezing/defrosting etc

So, I want to make a fish curry to use up some bits of fish I have in the freezer.
I have:

  1. a bit of basa that was bought fresh a couple of months ago and has been in the freezer ever since. I took it out this morning and it's been in the fridge since and is still quite frozen
  2. 1 x salmon and 1 x cod fillet. Both bought frozen and can be cooked from frozen so have left in the freezer
  3. a packet of cooked king prawns that were bought fresh last week and frozen immediately. These have also been out of the freezer since this morning and are quite frosty.

How do I go about combining these into a curry (with fresh veg and a packet of sauce) without causing food poisoning?! Can/should I try to defrost everything before cooking? I kind of thought I could cook off the veg, add the sauce, simmer the basa, cod and salmon in the sauce until cooked and the whack in the prawns just to heat through.

    Help!

I would have defrosted all of them so the fish is easier to cut. I tend to defrost stuff on the worktop and put in fridge once it's defrosted as it takes too long in our fridge

try and get it all out of the packaging and onto a flat tray, just out in the kitchen and it should all defrost pretty quickly

I'd do what you have said for method, as none of the fish is going to take long to cook, however I would double check the prawns were okay to be frozen as they often are not meant to be re frozen at home, but I am peculiar about and not very keen on prawns

I would defrost first otherwise you risk the frozen fish dumping liquid in the curry and making it all very watery.

Thanks! All out on the side to defrost.
Prawns definitely said they were fine to freeze again and to defrost before use
