Friday tea inspiration

Looking for ideas for tonight's tea. Maxed at work this pm so no time to think before nipping to shop for ingredients on the way home. Something more imaginative than the usual lasagne/chilli etc, can be prepared quickly (30 45 mins prep time). We eat everything and have a well stocked larder!
Apologies in advance if I don't respond quickly to suggestions

We are either having gammon, steak and chips or stuffed chicken breast wrapped in bacon with roasted veg (tomatoes, onion, courgettes etc).

Or how about pasta à la puttanesca which is quick and easy to make!

We're having a Charlie Bighams cottage pie with Kalettes. I've just had a section and we're moving house tomorrow. Trying to keep myself sane!

I don't know what this dish is called - I made it up one Friday afternoon after discovering that Waitrose have a good offfer at the fish counter on Fridays.

Mix balsamic vinegar, olive oil and tarragon.

Chop or slice fresh peppers and courgettes - not finely - and halve cherry tomatoes. Toss in the dressing.

Put veg mix in a baking tray and roast for 20mins.

Meanwhile toss thin fish fillets, eg trout or similar size, white or oily, in the remaining dressing, and leave to marinade.

After 20mins, take out the tray of veg and toss the veg around a bit. Clear a space in the middle for the fish. Lay a fillet skin-down in the space. Brush with garlic purée, sprinkle with capers (and slivered almonds, if using trout) and fold over. Repeat with the other fillets.

Drizzle or brush the remaining marinade over the fish, and put back in the oven for another 20mins or so.

Really nice served with greens and boiled potatoes.

Have decided on @GoodyGoodyGumdrops fish dish - but lots of other ideas for next week. Thank you for helping out.
