i have the following... celeriac, leeks, sweet potato...

i have the following... celeriac, leeks, sweet potato, onions, spuds, broccolli (a bit floppy!) cherry and tinned toms, and a well stocked pantry. What can i make and freeze using these?

Ooh I don't know but I know some people who will....

(my answer to all such questions is SOUP! or STEW!)

  1. curry it
  2. add tomato puree/tinned toms and ratatouille it
  3. as 2 but with hods of cillies/chilli powder
  4. boil up and puree/partially puree for soup
  5. chop up and stir fry with olive oil/lemon juice/garlic

    Not much you can't do with them, really.

Bashed celeriac with garlic and thyme. Cut up into smallish pieces, then saute with a clove of garlic (minced or chopped) and a teaspoon of thyme. Then add some veg stock to just cover and simmer for 20 mins until soft and most of the stock has reduced.
Roast sweet potato, meanwhile make some garlic/ginger butter and when potatoes are finished dot with the butter, and some soy sauce and toasted sesame seeds.
I would probably make a soup with leeks, onions tbh, as it is rightly a classic

Cut broccili up into small pices, par boil, then put a tablespoon of white vinegar on, with some salt and pepper. Leave to rest.
Meanwhile whizz up some anchovy fillets with some single cream and and then pour over the broccili
Tin tomtoes, just simmer with garlic an onion and some herbs, then liquidise and you have a pasta sauce ready for anytime

Not sure how some of those recipes will freeze, but hope they will be okay

overrun - you are a star, masterchef? have you considered it? It sounds absolutely delicious. Off to the cooker, once i can get off the sofa, maybe with a glass in hand
