Need a healthy, guilt-easing but filling meal idea for tonight...

I just ate an entire pack of chocolate covered raisins and now feeling a bit guilty and slightly queasy from all the sugar...

However I'm 7 months pregnant so can't just have a salad for dinner to make up for it - it needs to be something filling or I'll be raiding the fridge/cupboard all evening! But I feel the urge to have something healthy... Home alone with toddler tonight as husband is working late so should also be something fairly easy!

I'm thinking maybe baked sweet potato but not sure what fillings go well with sweet potato as opposed to ordinary jacket spud.

Any other ideas?!

One of the things I like is chickpeas in a spicy tomato sauce - I either go for Indian spices (chilli,ginger,garlic,cumin,turmeric etc) or more Mediterranean with smoked hot paprika, garlic - and an egg on the side (I aim for poached but haven't mastered the art yet!)

What have you got in the fridge and cupboards?

The Body Coach has an amazing, very filling recipe called Tomatoes, eggs and chorizo.

The chorizo is cooked in the pan so fine whilst pregnant.

It's very healthy and so delicious.

My absolute favourite recipe of all time is Jamie Oliver hit and run chicken - I'll try and find online.....

Make a curry! Lentil and tomato curry:

One onion and two garlic cloves
One red pepper diced
Turmeric, coriander and chilli powder.
Fry til soft then add 1 cup red lentils, one tin tomatoes and cover with bpiled water.
Add two handfuls of spinach when nearly cooked.

Really warming, hearty and healthy!

Thanks for these ideas! In the end I ran out of time to go to the shops so had to make do with what I had in - made a sort of veggie shepherds pie with a mix of sweet potato and normal potato mash. But it wasn't entirely vegetarian as I spiked it with a couple of big tablespoons of leftover bolognese sauce, for flavour...! Definitely felt healthy though Smile
