Need some budget meal ideas

I'm a tad skint this week and totally out of ideas for what to make for dinners. Totally not helped by the fact I'm vegan and 1 of the DC genuinely thinks they're allergic to green food!

Does anyone have any ideas please? Already got pasta bake planned and trying to think up ways to use up all the random lentils/taco shells etc without the kids realising they're healthy! I'm well used to main different meals for us, but do draw the line at anything that involves cutting up fresh meat!

Vegetable fried rice, Just buy a pack of cheap frozen veg and fry up with rice and whatever spices you like

Soup and crusty bread

Lentil loaf ( if you google it loads of vegan recipes come up)

Lentil curry or lentil chilli in taco shells

Beans on toast grin

Lentil burgers
Nachos with lentils instead of mince - break up the taco shells to use as nachos

Omelettes? (For the non-vegan ones!)

Jacket potatoes beans or hummus for you as vegan and the others could have tuna/cheese/beans

Make a veg chilli huge pot and have with rice, potatoes or serve with taco shells and cheese (for non vegan)

Omelettes for non vegan, can add all sorts of cheese/veg

Lentil stew, fry off an oil with garlic, paprika and a chilli if you like, what ever veg you have, add 1/2 pint veg stock, chopped tomatoes, tomato purée and then while that is simmering boil some lentils as the packet says and add to th stock. It's honestly nice and the paprika gives a nice smokey taste

Beans on toast

Veg stir fry with noodles

cauliflower 'wing' tacos go down well here even with the very carnivorous inlaws!

loads of recipes online but our fave:

chop some cauliflower, roast for a bit, mix a pot of hummus, a load of oats and some water and then coat cauliflower in the mix and roast again until crispy.

Then use mini wraps or taco shells ad serve with a range of whatever veg they eat (tomatoes, sweetcorn, red cabbage and guacamole is good) serve with some rice and job done.

Big soup to use up all the leftovers (bulked up with lentils). With baked spuds?

I made this last night without the artichokes. The kids liked it.

- Shakshuka (just need tinned tomatoes, honey to Sweeten the acidity and eggs)
- Soup. One pack of mushrooms or sweet corn is all you need
