What can I do with quinoa?

I got a couple if boxes of black quinoa on offer a few months ago and they have been sitting in the cupboard ever since. I did cook some as a side with curry but wasn't massively impressed. So fling your best quinoa recipes at me!

Well mine isn't a recipe but I used some to bulk up chilli con carne - I batch cook for the freezer.

I cook half quinoa, half bulgar wheat with some stock, wait for it to go cold and mix with feta, olives, tomatoes, cucumber and red onion. Sometimes add lemon and dried oregano. Greek salad but with more substance

Put it on your coffee table to use as a talking point. If anyone who visits cannot pronounce quinoa correctly eject them forthwith. Alternatively it might attract birds into your garden if sprinkled.

Like a pasta bake but with quinoa

Both of these recipes work well with white quinoa- haven't tried with black!

There are some good quinoa recipes on YouTube- one of them was quinoa, chicken, asparagus and broccoli with lemon. Haven't heard of black quinoa before though. Where was it on offer?

It was dirt cheap in the reduced section in Asda, no idea why as it is well within date and not damaged at all.

Had it mixed with chopped mango at a friends. Mixed salad, everything finely chopped and the mango added last. Went really nicely with BBQ meat and fish.

Use it instead of cous-cous served with a spicy fruity lamb or chicken tagine.

Make a Moroccan style salad with it.

I served a mix of quinoa/bulgar wheat as a side to go with a curry last night.

I also like to mix it with salad (make with chicken stock and dried fruit such as barberries and parsley), which is lovely served with grilled/BBQ meat/fish
