Meal plans for this week anyone?

This week ahead has way more work than usual, childcare and generally everyone dealing with the joys of me being pregnant and grumpy in the Warbeck house. Putting my organised hat on to try and make sure we all eat this week!

Planning to do:

  • Coconutty veggie curry
  • Stuffed cheesy aubergines with veg on the side
  • Carbonara
  • Quorn & veg pie
  • Easy tomato pasta bake
  • DH's cooking night
  • Freezer dinner

S: Steak, homemade chips, mushroom and greens
M: Spag Bol
T: chicken casserole
W: beef tagine, Bulgar and roasted veg
T: chicken curry
F: no plans yet as off for Paddys Day

M - also coconutty veggie curry! Using up butternut squash and courgette, with additional chickpeas and spinach with rice, Salmon fillet instead of curry for kids
T - venison minute steaks and salad for grown ups, spy and honey ribs and noodles for kids
W - Roast Duck Crown (supermarket bargain of the week) with chips and broccoli
T - Chicken in creamy sauce (white wine, creme fraiche) with pasta
F - not got this far. Maybe pizza?

I'd rather be cooking one meal everyday, but fussy children here and this works! Menu dictated by what's in our meat box this week and what's left in the fridge from last week Grin

Tomorrow veggie fajitas
Wednesday: pea and mint soup
Thursday: tofu, broccoli and cashew stirfry

Low carb week for us Sad
Monday: chicken, bacon & avocado salad for lunch, sausage casserole for dinner
Tuesday: lunch - feta & courgette frittata, dinner - steak, roast tomatoes, asparagus & broccoli
Wednesday: lunch - tomato, mozzarella & avocado salad, dinner - salmon fillets with edamame beans, feta & mint
Thursday: lunch - goats cheese, pear & walnut salad, dinner - calves liver with onions, mushrooms & Madeira sauce
Friday: lunch - chicken breasts stuffed with blue cheese & wrapped in Parma ham with rocket & spinach salad, dinner - sweet potato & coconut curry
Saturday - prawn & scallops stir fry
Sunday - roast lamb, roast Mediterranean veg

Today- calzone filled with roasted red and yellow peppers, black olives, cherry tomatoes and mozzarella

Tomorrow- Chilli con carne with guacamole, sour cream, black beans and corn tortillas

Thursday- cauliflower and broccoli macoroni cheese

Friday- roast chicken dinner

Saturday- chicken soup

Sunday - something Ukrainian from my new Ukrainian cookbook

Monday - Lemon chicken
Tuesday - Turkey Burgers
Wednesday - DC's being taken out for supper, DH in hospital, me don't know
Thursday - Pork schnitzel and potato salad, DS eating at sports Center
Friday - Lamb ragu, DD chicken and pea risotto, DS either pizza or jacket potato
Saturday - mussels if there are any in our local fish shop, DC's spaghetti and meatballs
Sunday - roast something

Do you make it with pizza dough just stuffed, folded over and baked? Might do a spinach and ricotta one I think instead of hailing the freezer as planned...

Basic pizza dough, fill half and fold over. There's a good Jamie Oliver video where he shows a good crimping method for for the edge- it's there if you google calzone

M: Lamb, babaganoush, chickpea with roasted baby plum tomatoes
T: black bean soup
W: chicken breast stuffed with duxelles, new potatoes, asparagus
Th: mixed tomato salad with buffalo mozzarella, spaghetti with pesto
F: out

perhaps a harira
somethign with left over roast pork, perhaps wraps aklthoguh we had fahitas last night s that might be a bit samish.

M - Shepherd's Pie for DH, Veggie stew with dumplings for DS and I.
T - Pepper and Pea risotto.
W - Sausage Casserole (Veggie sausages for DS and I, Pork for DH).
TH - Butternut squash and red onion soup with sourdough bread.
F - Roasted red pepper, sweetcorn, onion and cheese pastry parcels and salad.
S - Macaroni Cheese with leek
S - Quesilladas filled with ratatouille with salad. DH will have bacon or meatballs in his.

M: salmon fish fingers, mash potatoes and veg
T: shepards pie
W: stir fry left over roast beef with couscous , will probably make it a bit spicy

F: not sure, we are going to the cinema, may get a take-away!

First one in a while:

Mon: DS cooking fresh tomato sauce pasta with sausages for him and DH, chicken for DD and extra Veg for me
Tues: sweet potato spaghetti with meatballs for the boys and veggie balls for the girls
Weds: pasta pesto
Thurs: fish and chickpea ravine
Fri: pizza night
Sat: hot smoked salmon and smashed potatoes and asparagus
Sun: smoked chicken (veggie burger for me), Veg sides dependant on delivery box

Thursday not sure what yet but something vegetarian
Friday leftovers or something quick eg eggs
Saturday probably meal out as we have a visitor staying
Sunday roast chicken

Sat: out for the football
Sun: Lamb shank and all the trimmings
Mon: Lamb burgers, Chips & Salad
Tues: lamb tikka masala with naan bread, poppadoms and chutney
Wed: Chinese ribs and egg fried rice
Thur: Steak and ale pie, mash and veg
