Not very exciting but I usually just make little foil parcels, bung some cherry tomatoes in and drizzle her with a bit of Olive Oil then stick her in a hot oven.

Fish pie is another option.

Bake the cod in butter and a little olive oil. Pour some Passata-type stuff over the top along with some Parmesan and basil.

That might be a bit easy but it's what I give my dds sometimes and I think it's lovely!

Was going to suggest bashing it!!!

Don't know what the baked mediterranean one is, so apologies is this is it:
Mix some breadcrumbs, grated cheese, mustard and whatever else takes your fancy. Press it on top of each cod fillet. Bun in the oven along with some cherry tomatoes for about 20 minutes. Serve on a bed of greens.
Or you could maybe make a fish pie?

I would steam it on top of courgette & carrot sliced into Julienne strips with some black pepper/lemon juice & milk.

Bung on top of veg, put a bit of milk & butter in, loads of black pepper and some lemon, cover with foil and steam in oven for 40 mins gas 5

was going to attempt an easy fish pie tonight (from the back of the cod packaging !). Just cheese sauce and potato really although i was going to be imaginative and put some spinach in with the fish.

Don't waste cod on fish pie, you can use anything in a fish pie.

Use some salted butter and fresh parsley in a frying pan, dip the cod in seasoned flour and fry it, and serve it with new potatoes and sugar snap peas, pouring the buttery fishy yummy juicey stuff all over the veg.

Coley is very very very cheap compaired to cod, and in a pie you can't tell the difference!

ohhh, I never thought of spinach in a fish pie.

Cod is nice with a thin layer of pesto, seasoned and baked in the oven.

Or just with lots of s&p in a foil parcel with a bit of white wine to steam. Roast well seasoned baby spuds, peppers, baby carrots, red onions and courgettes in olive oil.

I only suggested baby spuds because they are a nice size to roast without chopping up (ditto the carrots). Just do the spuds in wedge form and chop up normal carrots into roastable chunks

sounds nice g'ski. Wouldn't bother with the breadcrumbs if you are going for pesto.
