There's quite a bit of meat left on the carcass after dinner, plus lots of gravy. I thought I might make make some soup, but last time I tried it was very bland. Any suggestions for a lovely recipe? Doesn't have to be soup, I'm open to suggestions, but DH doesn't like pasta and I'm the only one who eats risotto.
Put the carcass in a large pot and cover 2/3 with water. Take the top off a whole garlic and throw in. rind of a Parmesan. Black pepper corns Celery sticks about 2 2 carrots chopped into thirds An onion or two Bay leaves Good handful of salt.
Cook it down and take out all the veg and chicken bones. Cook another 15 mins without everything in. Season for flavour. You can then add cooked spaghetti or make some matzo dumplings with the shredded chicken. Also grated Parmesan on top.
