If you're interested in learning to cook great veggie food I recommend taking a look at the antidote kitchen. Great sauces and easy recipes that even meat lovers will enjoy

I would include 'one pound meals' by Miguel Barclay. Some of the recipies are fairly simple and others are more complex, however there is a nice range in there. He even has a recipe for a £1 Sunday lunch.
