Vegetarian meals that DH will eat

Having a vegetarian couple over for supper soon and struggle with what to make because DH is SO fussy. I personally eat quite a lot of vegetarian food, a very small amount of which DH will tolerate.

They come over quite often so ideally I'd make something different to what I have before and it would be great to find more veggie stuff any way DH will eat.

He will not eat:
Fruit, sweet potato, squash, avocado, aubergine, cheese of any kind, yoghurt, cream of any kind (sour, creme fraiche, double, single etc), sweet things. So thinks like dried fruit in things are out.

So things I do so far (dinner party wise - do omelettes, colcannon etc sometimes)

Vegetable chilli, mushroom risotto, pasta stuff, Thai vegetable curry, Indian veg curry.

I don't like doing a meat and vegetarian option. Unless I'm doing a big spread like lots of curries etc. Mostly also because I want DH to get over the deep seated 'but where's the meat?' reflex.

What does your dh eat then? Meat and potatoes?

If it's just for the odd dinner party i'd do what you and the veggie couple would like.

Your dh can try it, he needs to broaden his tastes. He might like it :)

If he doesn't, he can fill up on bread and butter, baked potato, garlic bread etc, or eat when guests have gone.

He is a weird one because eats lots of things your standard 'fussy eater' wouldn't. Any kind of sea food (even completely weird eyeball type stuff), very spicy food, all other vegetables other than listed above.

But I agree re his fussiness it's a massive pain. Interestingly I've posted about it on here before and had a resounding 'YABVU he's a grown up he's allowed to eat what he likes, why are you treating him like a child and trying to change him?'.

I go asian for veggie food as DH is not a fan of veggie casseroles but much more chilled with Asian food.

How about vegetarian nasi goreng. I've actually only made with chicken to a Rick Stein recipe but it would be easy to leave out and either add omlette strips or more hard boiled egg on the side.

I like the idea of a veggie nasi goreng frenchfoodie. Otherwise, what about something Middle Eastern/North African: a veggie tagine on couscous? Roast cauliflower with chili and tahini?

Nigella's lentil chilli, with cornbread, is delicious.

My mum made a great Delia veggie moussaka recently - I guess you could leave out the aubergine but it'd definitely lose something!

Does he like pies? My MIL makes a lovely chestnut bourguignon pie, but I don't know where the recipe's from.

Starter ~ Garlic mushrooms with nice bread to mop up sauce, or soup.
Main ~ Pasta primavera or vegetarian paella.
Pudding ~ Almond or polenta or ginger cake or sorbet.

Fajitas? Depends how relaxed the evening is but can be good because everyone gets only what they like

Moroccan tagine I was going to say ... my OH won't eat dried fruit but will eat the apricots and sultanas in a tagine.

A lovely veggie pastry dish like a pie or pithivier with buttery homemade flaky pastry.

There are lots of fillings you could use.

Not to my knowledge, OP - there's no cheese in a bechamel, and that's basically what the sauce is, sometimes with egg yolks.

Courgette orzo bake - think it's a waitrose recipe. If you can get courgettes, it's bloody lovely! Orzo is pasta but about the size of rice grains.

Bechamel is an absolute no go. That's lie cream to him.

I've never heard of a pasta bake without any kind of cheese/creaminess? V interested to hear more dropzone

If you wanted to do a pasta bake you could just cover it in garlicky herby toasted breadcrumbs for a nice crunchy texture if you're not having cheese. A rich tomato sauce would be nice with some other veg either mixed in or layered.

Ooh yes that's true pangrattato is as delicious as cheese.

I've looked up the orzo bake and it is unfortunately cheese tastic.

Yes venus or you can use pesto sauce instead of tomato. I like that on pizza too , tomatoes give me eczema. If you make the pesto yourself it doesn't need to have the parmesan in it. It's nice on lots of things..

Yes, I'd definitely eat a pesto pasta bake with a pangrattato topping. Lovely. Mushrooms go really nicely with pesto pasta I find. Or green beans and new potatoes for a pesto genovese style dish.

Obviously use vegetarian pesto (easy to make in the blender) without Parmesan for your guests.

what about "formed" quorn products - they do essentially a quorn chicken kiev with mushrooms in it.

I recently saw a stuffed portobello mushroom recipe, using pate. You could use mushroom pate to stuff it and put breadcrumbs on top then just grill.

Pesto has cheese in it so best avoided.

I've recently done a chorizo stew with tinned tomatoes and stripped of red peppers with eggs baked on top. nicer than it sounds. DS is veggie so we used the chorizo style quorn sausages and a bit of extra smoked paprika. would he eat that?

There are vegetarian jarred pestos. Plus it's very easy to make your own and make substitutions and leave out cheese entirely. It depends if the DH has an allergy or just doesn't eat cheese as it's more of a flavouring in pesto.

Your stew sounds nice and I don't mind some quorn sausages but there are only a few quorn products I like. A lot of vegetarians don't like the texture.

Cook something you and your guests will like eating. He can either eat it or cook his own dinner.
