Meal ideas - food allergies

I am looking for some new meal ideas and wonder if any of you could help.
Me and my partner seem to be stuck eating pretty much the same dishes over the course of the week, mainly due to allergy restrictions.
We are both vegetarian and between us our allergies are to mushrooms, peppers, chilies and spices belonging to the same group (so recipes including five spice, or curry powder are out of the question, as are a lot of ready made cooking sauces)
At the moment we have our own favorite variations on lasagna, burgers, bolognaise and of course we eat a fair amount of egg and pasta type foods, vegetable stews, soups and tomato sauce based bakes.
We are on a tight budget at the moment so that needs to be taken into consideration (small amount of very basic stock cupboard ingredients, access to fresh home grown herbs, but obviously recipes requiring the purchase of expensive items is out of our reach, even if the price per use is low)
The ideal meals would be either slow cooker compatible, very quick to prepare and cook, or easy to cook and then reheat as the other came in from work in order to cut down on fuel use and time as opposed to having to cook separate. .He works until a set time but I work shifts so we don't always eat together
We share the cooking and both are confident in our abilities, having grown up being used to cooking from scratch, so easy recipes are not necessary.
Does anybody have some suggestions on what we can cook to change things up a little bit please?

Just to add to the above post, we don't have access to a freezer, and only a small fridge so batch cooking for more than 1 or 2 days in advance is not an option, an issue that is incredibly annoying as buying and cooking in bulk is so much more cost effective

How about a tagine with chickpeas, BNS and apricots served with cous cous? I'm not entirely sure of the relations between spices but this would typically use cinnamon, cumin, ginger and Harissa paste but I'm sure you could tweak to meet your needs.
A veggie toad in the hole? Could either use veggie sausages or roasted red onions and other veg. Although not ideal for reheating.
BNS stuffed with herby cous cous and feta.

Thank you so much for those suggestions, the toad in the hole and the stuffed squash are a definite yes, so two new meals already
We don't always need to reheat food so the toad in the hole will make a nice meal for when we get the chance to eat together.
Unfortunatly harissa paste is not suitable, something that we struggle with when it comes to a lot of cooking pastes and sauces. It does limit the food possibilities, I have never known how to substitute things like that, it seems the spices are an essential part of the flavour and it is extremely difficult to work out a safe version

When I was vegetarian my favourite meals were
cheese and tomato hotpot,
sweetcorn fritters with salad,
Baked sweet potato with garlic butter and sour cream with salad.
