Why do my roast veg always come out soggy?

I love roasted veg but for some reason mine are coming out soggy rather than lovely and roasted. Any ideas why this might be?

1. Oven not hot enough

2. Not cooked for long enough

Or

3. Tray is overcrowded and the veg sweat rather than roast.

Do you put them in hot oil?

no i didn't put them in hot oil, does that make a difference?

Oil and oven are not hot enough and veg are over crowded.

Hot oil makes a big difference, and preferably a metal roasting tin. A splash of oil, into the oven till the oil gets really hot, and then put the veg in, witha bit of space. They should sizzle as they hit the oil.

Par boiling potatoes for ten minutes and giving them a shake to rough them up also helps a lot.

Ok great thanks. My roasties are always fine :-D

I do try and give them space so they don't sweat so i think it must be the oil that's the problem.

How deep is your roasting tin OP? I find veggies roast better on a flattish metal tin, so the veg are properly sourrounded by heat - to avoid the sweating mentioned above.
