what colour is it meant to be inside (safe to eat)

Juices should be clear, not cloudy or pink. If so, then any colour is fine, including pink.

Any 'meat' colour, that is - I wouldn't eat it if it was green or blue or yellow!

No, I wondered the same when we had chops last year, and then I read all about it in the River Cottage Meat Book.
