Best meals to freeze

My mum isn't very well and has limited access to shops. Unfortunately she lives a good 90minutes away so I can't pop round with dinner. I'm visiting next weekend and want to take some meals down to put in her freezer. She's quite health conscious and loves her vegetables and enjoys both meat and fish.

Any ideas for meals or recipes? TIA

I love frozen curries as they get a flavour boost - the hairy dieters ones are good or a madhur jaffrey one (she puts far far too much salt in though generally so I'd skip the salt and season at the end of cooking)

Am interested to follow this as always looking for good freezer meals. My freezer is full of the obvious Cottage Pie, Bolognese sauce for Spaghetti, lasagne, Chicken pie filling ready to have as pie or with rice, fish pie and fish cakes. Also soup.

Roast Mediterranean veg freeze well, and can then be served with e.g. salmon.

Thanks very much that gives me some ideas to take down. She likes curry in particular and i have the hairy dieters book and I know roast vegetables is another favourite. I'll also do cottage pie and lasagne.

Flesh - do aubergines and peppers freeze well? Am always worried they go mushy. What do you put in your veg? Am def going to do that! Great idea.

I often stir spinach into curry to boost the nutrition. The little frozen bricks are great.
Lancashire hotpot hasn't been mentioned, but lamb is so tasty.

Aubergines are probably the worst. What I tend to do is under cook slightly on the first roast, and then finish off in an oven again the second time. Or buy from Waitrose :-)

I use courgettes, fennel, red peppers, aubergine, red onion, garlic. Will add tomatoes & basil for the second roast.

this was amazing and so quick and easy to make. The only adaptation I did was to coat the chicken strips/chunks in flour then saute with some soy sauce chucked in. It gave the chicken a nice colour and a bit of a "coating". Did everything else per recipe (except used ordinary cider vinegar instead of rice wine vinegar as I didn't have it. I would imagine it would freeze OK.

Secondly, this is lovely. Again, my adaptation was to add loads of leaf spinach towards the end.

This is ridiculously easy. I halve the amounts and it's still loads. I omit the tomato paste as I'm not keen on the concentrated taste it works fine without. Again, add tons of spinach towards the end. I have frozen it and it's fine.

This is lovely. (Wrong pic with the recipe so ignore!). Takes a bit of time to make but delicious and a bit different. Don't know how it would freeze.
