Healthy vegetarian recipes

I want to introduce a couple of meat free days into my diet and I'm struggling for ideas. I'm more than happy cooking from scratch but I can't think of anything more inspiring than pasta dishes or jacket potatoes! Please send some inspiration my way!

Veggie stir fries
Chickpea/lentil curry
All manner of salads
Risotto with barley instead of rice

5 bean chilli
Peppers stuffed with cous cous, veg and mozerella
Frittata
Morrocan root veg and chickpea tagine

Vegetarian lasagne is amazing! Just any veggies instead of the mince (we tend to do leeks and spinach) and use ricotta instead of white sauce.
So leeks and spinach mixed with ricotta, lasagne sheets, normal red sauce, and repeat.

We also eat a lot of egg based dishes.

Curries with cashew nuts is always a winner plus the cashews offer a good source of protein smile

Spanakopitta (spinach and cheese filo pie) with baked baby potatoes and salad
Veggie curry - any veg you want plus handful of lentils or chickpeas
Veggie Biryani
Risotto, eg lettuce and lemon from the MN Cookbook - but you can put in anything you like
Veggie stirfry with noodles
Moroccan veggie tagine with couscous and harissa
Roast veggies with couscous, salad leaves and goats cheese and harissa
Tabbouleh or kisir (Turkish version with pomegranate seeds)
Huge Spanish omelette with salad
Veggie stroganoff - I usually do it with courgettes, use any veg you like
Veggie chilli
Tumbet or similar eg slow cooker Spanish potatoes from the MN cookbook
Spinach and ricotta lasagne or cannelloni
Paella - anything you like, I sometimes put veggie hotdogs in (cut up) and smoked paprika
Soup with bread and cheese

Wow...thanks for the ideas everyone! Lentil ragu added to the meal plan for our evening meal and cous cous salads for my lunches for next week. Think frittata will be lunches for me too, thanks again everyone this has given me the kick I needed
