Really easy/ not bothered dinner ideas?

I'm pregnant, sick and have zero energy! I ate well over Christmas but have worn myself out hosting dinners. I am able to cook but I just feel so unmotivated this week Envy does anyone have any really easy/ simple/ minimal washing up/ somewhat healthy dinner ideas?

DH works late (comes home for dinner, then leaves again) so I'd love a meal I could just have a bit of cleaning to do. I know this thread makes me sound like the laziest little shit of all time but I'm honestly not!! Grin

What sorts of things do you use to eat?
To be honest, in your position I'd probably order a load of stick them in the oven style dinners until I felt better.

My favourite can't be bothered to cook meal is fish with rice and steamed vegetables. Just make a foil parcel with fish, ginger, soy, lemongrass, sliced red chilli and lime then stick it in the oven. I like it with babycorn, mangetout, peas and broccoli plus brown rice for extra healthiness points.

Other easy things do regularly are...

Chicken, chorizo, red pepper, tomato and sweet potato tray bake

Spicy prawn/chicken/chorizo pasta

Fake Nando's...chicken thighs coated with a spice mix, sweet potato wedges, corn on the cob, macho peas (mashed peas with coriander, mint and red chilli) and halloumi.

Stir fry
Pasta with pesto and green veg
Jacket potato with beans and cheese
Egg and chips
Omelettes

Chicken thighs - stick them in the oven with some rosemary, a glass of white wine (or chicken stock) poured over them, a bit of garlic paste rubbed on them, and baby potatoes tucked in around them. Gorgeous sticky chicken with crispy skin, and mini baked potatoes. Takes less than 5 mins to prepare and 35 mins to cook but looks like you made an effort.

Diced chicken breast with curry sauce and rice or naan?

Pasta with tomato and mascarpone ready made sauce, add some black olives and fresh basil, and a leaf salad

warm things in wraps - more or less any chicken/meat/fish baked/grilled and put into tortilla wraps with a bit of salad and sauce or mayo. I like grilled chicken with lettuce, tomato and mayo or fish fingers with cucumber, lettuce and tartar sauce. The possibilities are almost endless!

Higgity pies with microwave mash and frozen peas

Pack of green beans, pack of baby toms, olives, capers and a few anchovies in a pan (no chopping) with two fish fillets on top done in the oven for 15/20 mins.

Filled fresh pasta with bag of salad

Fry a pack of lardons. Add frozen or fresh (but chopped) stew mix. Add quick cook soup lentil mix. Stock. Soup in 15 mins.

Pregnant too, feel the same..
But here's some I do:

Pasta bake with med veg & chicken (loads of cheese on top)

Steak, new potatoes & salad

Bolognese of course

Can always season some chicken night before (tandoori, madras, lemon n thyme) loads of options .. Put in oven next day with some rice..

Can always Google one pot dishes
However I'll be watching this post as I need some new ideas too.. Xx

The other thing i would suggest in terms of ease of prep and ease of clearing up (helped me when pregnant):

  1. if you have one day when you are less busy of feel more motivated, chop veg you are likely to be able to use like onions etc and put them in a tupperware box in the fridge so you can just grab them rather than needing to prepare from scratch in a day or two. they last a lot longer than i thought they would and did make meal prep a lot easier.
  2. buy cheap disposable foil oven trays etc. so can just chuck rather than cleaning.
    3)takeaways (you can get some healthy options...) Smile

    microwave mash and microwaveable rice and wet noodles were a revelation when i was pregnant and i still use them now!
