what is the perfect pancake mixture?

4oz plain (or bread) flour
1 egg
1/2 pt milk
1 tabsp oil

I use

4oz plain flour
2 eggs
1/2 pint milk
dollop of oil.


Then I times it all by 3 and set it aside till later (done already).

Very hot frying pan. I use a ladle to "pour" out the mix.

here:

1 cup all-purpose flour
2 tbsp cornflour (not cornstarch)
1 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp ground cinnamon
1 beaten egg
1 cup buttermilk
2 tbsp cooking oil (not olive)
1 cup fresh or frozen blueberries.

Mix dry ingredients in one bowl, wet in another. Stir everything together till just moistened, then gently fold in blueberries. Cook in med-hot lightly buttered pan. Flip pancake when bubbles come up & edges are slightly dry. Serve with lashings of maple syrup. I double this recipe for the 4 of us.

looks like a lot more work than other recipes but it's not hard, truly, & well worth the trouble!

Is the dolop of oil for the pan...or for the mixture??

I agree with katymac - delish. Although I don't make it a full half pint of milk - about three quarters milk one quarter water. For a thin delectaBLE CREpe

Same as Mars Preferably a non-stick pan with the bare minimum of oil wiped around with a bit of kitchen paper.

well I followed your recipe to the letter mars...truly yummy...but I think I might have eaten one too many...you know that battery belly you get afterwards!!!!
Plus the kids had chocolate spread on theirs, and I finished off the left over bits...[stuffed emoticon]
