Roast lamb

Has anyone got any tips or anything they add please?

If it's a leg, I put slivers of garlic and bits of rosemary in cuts all over it. some people do this with anchovies also.

I make up a garlic and rosemary butter (just whizz it all up in the food processor) and smother the whole leg of lamb in it - after stabbing lots of little holes in it for the butter to run into. Baste every 30 minutes. It's always lovely. 😋

How about slow roasted caramelised leg of lamb, I have tried this recipe but I think it needs more frequent basting and perhaps a touch of honey for more caramelisation.
