What can i do with the ginger from making gingerbread brandy?

I made spicy gingerbread brandy but want to use the ginger rather than just throw away... Any ideas?

I'd chop up and use in a beef or lamb stirfry, the brandy taste might make that have a twist.

Mix it with mincemeat then stuff into cored apples and bake - serve with custard

Chop fairly fine and add to shortbread.
