Chicken traybake

I am doing tray baked chicken breast tonight with peppers, red onion and mushrooms.

What liquid can I add to keep it moist? Just chicken stock or something else?

If you cover it for all but the last 10 minutes or so you won't need additional liquid with the veggies in there; they'll give off enough water to steam the chicken nicely.

Agree you won't need much

But if you want to add something:

Chicken stock
Glass/glug of good white wine?

Oh I've got some fresh lemon thyme too. Won't it be a bit dry without liquid?

This Mary Berry recipe doesn't use any extra liquid but uses preserved lemons for moisture

and this Spanish inspired recipe uses just three tablespoons of red wine vinegar or sherry vinegar (which is good to counteract any greasiness)

Balsamic vinegar goes well with tray baked chicken and veg.

You could also put sliced tomato, orange or lemon on top (or a mixture) - another alternative is to marinade it for a few hours in orange juice (I normally add chopped onion & tarragon, garlic, cumin, paprika for Fajita wrap).

I don't normally add liquid, but wine would be good. I do sometimes querter lemons or oranges, squeeze over and tuck the pieces in for flavour. Toss your veg with a bit if olive oil, if you aren't already.

I normally just add a drizzle of oil. Doesn't get dry at all

You know a bit of chorizo would make it really tastry. Very small amount of chicken stock

The mushrooms will give out enough liquid to keep it moist I would have thought. I never add liquid but would use a bit of olive oil normally unless the recipe included chorizo.

i just use a bit of olive oil as well
