(was going to do it myself but dh not around)

or a casserole you bung in the oven at lunchtime (while dd sleeping) that slow cooks for hours (have nice recipe for lamb slow cooked in red wine and tomatoes somewhere)

Really easy meal which is nice is chicken stuffed with boursin and wrapped around with pancetta. You can prepare it in advance and then bung it in the oven for 30/40 minutes... And I'd cheat with the dessert and buy one of those fancy chocolate fondants or something from Sainsburys. Simple starter would be avocado with a balsamic vinaigrette - takes 30 seconds, but is yummy imo!

Wait until half an hour before dp is due home ring favourite delivery takeaway. When it arrives place lovingly on plates. Voila!
