Is there a critical mass for making fudge - you know normally you get 43ponds of the stuff!

My recipe uses a tin of evaporated milk - if I scale it all down to a little tin will it work?

The temperature the mixture reaches and for how long you keep it there is the key for me, so give it a go.

Hmm yes it is a lot of fudge - but that's how much it feels like when I make it!!

Why not make the full amount and then either freeze half or give some to friends - I know I would love it if a friend gave me some

I know but chances are I'd eat it!!

& it isn't good for me

I'll try it & if it doesn't work I'll make a huge amount (at Christmas I have given away about 5lbs of the stuff before now)
