So far i've managed:

Monday - Cottage pie - what goes with that?

Tuesday: Very mild lamb curry w/rice and yoghurt sauce/parathas

Wednesday: Cooked dinner (roast chicken, veg, gravy etc.)

Thursday - Something veggie or fish based..Any ideas? DH is sick of Greek Cod Casserole (a fantastic quick to prepare meal) so must do something else...anyone?

Friday - ran out of ideas

Saturday - lamb tagine with couscous

Anyone have any other meal suggestions. We've had a lot of frozen foods recently - quite sick of it.

Something v. quick & fishy:

Cook some pasta (I use spaghetti or linguine)

Saute white fish (any will do or you can use prawns) in butter for about 5 mins. Break the fish into chunks with a fork. Add frozen peas. Cook for another 5 mins or so.

You can add garlic, lemon, parsley, chili etc if you like.

Drain the pasta, mix the fish & peas etc with it.

Serve.

Easy & yum.

I don't really eat fish but will eat this. It's a good way of trying new types of fish too.

Other ideas: Wraps, fajitas, lasagne, rissoto, casserole, Carbonara, gnocchi.

Have a search in the archive for other menu planning or quick & easy meal threads. There are lots of good ideas on here.

that's lots of big proper dinners - DH would be in heaven (and 16 stone) if I cooked all of that

i'd probably do a simple homemade soup of some sort . you could make a stock for the soup from the roast chicken carcass. and have with fresh bread and salad, and tbh we have beans on toast or poached egg on toast at least once per week.

Thanks for all suggestions

MM - Hello [waves] Yes, indeed!!! I am not going to fret though as have both ILs AND parents (well mum & her DH) here while i'm in hospital and the latter for a few weeks after - all good cooks - am going to milk it this time for all it's worth and not play the independent martyr... All hands on deck I say while I do as little as possible
