Vegetable Pie

I went to an event last week and got a vegetable pie. It was so nice, really thick crusty pastry and the filling, whilst quite plain (I think it had swede etc) but really tasty.

Can anyone suggest a recipe so that I can try to recreate it / something similar please?

Buy a pack of puff pastry. Make something like cauliflower cheese, or whatever you fancy, top it with the pastry and bake. Yum.

That sounds like a good idea, it was the shortcrust I really liked - would that work do you think?

That's it! Thank you, it was at a 1940s weekend so that makes perfect sense! (still going to do the cauliflower cheese one too though)

It's not a diet pie but I make a potato, leek, swede and carrot pie that is to die for.

Make a parsley sauce.

Lay shortcrust pastry in your pie tin.

Very thinly slice (with a mandolin) your veg into rounds.

Layer the veg (dotting with salt, pepper, butter and thyme if you have it ) till full, and pour over parsley sauce. Add cheese layer.

Top with puff pastry sheet ( I like to have both crusts if I can)

It's delicious.

I always use cheese pastry for a veg pie with loads of onions,carrots,Swede,maybe cauliflower or broccoli and a white sauce made around the onions with a teaspoon of my secret ingredient marmiteHalo

All these sound amazing. (I had to get rid of our mandolin when I sliced a bit of my finger off; but can probably slice thinning) I found the original Woolton Pie recipe uses potato pastry which would explain why it was so filling and crunchy. I am definitely going to have a go.

Have bought stuff to make a cauliflower cheese pie and might top it with potato pastry - yum.

I make veg pie with celery, carrots, mushrooms, onion, green lentils and a slosh of red wine. Add a tablespoon of tomato purée too.
Even if I say so myself, it's delicious.

You're all making me hungry. Dh turned some leftover curry into a pie a while back. He liked it, but I wasn't so sure.
